Chicken Alfredo

Here is a great recipe that my sister gave to me. It is a low carb meal and very delicious.

Ingredients:

Three Chicken breasts

Butter

Two tbsp of Olive oil

Mushrooms

Half cup of Heavy Cream

One cup of Grated Parmesan cheese

How to Prepare:

Cut the chicken breasts in half and put salt on them.

Melt four tablespoons of butter with two tablespoons of olive oil and fry the chicken breasts.

In the same skillet, on medium heat, add the mushrooms and sauté until they are done.

For the sauce:

In another pot, Melt 2 tablespoons of butter then add the cream.

Once it is warm, turn the heat off and add the parmesan cheese.

Add the mushroom after the cheese melts and add directly on to the chicken.

Serve immediately.

You can sprinkle it with some parsley, or have some fresh bread on the side.

Chicken Liver

Chicken Liver is not one of the most lovable dishes for many people despite its healthiness. This recipe will make people change their minds about chicken liver so go ahead and try it if you dare.

Ingredients:

One Pound of Chicken Liver

Diced Onion

Butter

Salt and Pepper

Lemon

How to Prepare:

Cut the chicken liver into pieces.

Heat the butter on a medium flame, then add the onion and stir until soft.

Add the liver pieces with some salt and pepper and stir until brown.

Cover the pan and lower the flame.

Cook for 10 minutes stirring every every now and then.

Squeeze the lemon and pour over the Chicken Liver and serve.

Trip to Pennsylvania

Four years ago on a Saturday in the summer, we decided to take a drive to the Chocolate World. For me this was like driving to heaven :). We ended up at the capital of Chocolate, Hershey PA. The trip was not only fun because we went to Hershey and bought lots of chocolate but also we had the chance to buy some fresh produce from the farms in Lancaster.

Shepherd’s Pie Sweet Potato Style

Just thinking everyday what to cook for my baby takes a lot of time. I know he loves sweet potato so I decided to make it as a meal for him by using it instead of the white potatoes in Shepherd’s Pie. He loved it 🙂

Ingredients:

Two Large Sweet Potatoes
One Egg
1/2 Cup of Crushed Bread Sticks (Bread Crumbs)
Salt & Pepper
1/3 Pound of Ground Beef
Diced Onion
Butter

How to Prepare:

Boil the sweet potatoes until soft.

Meanwhile, using a saucepan, melt 1/2 tbsp of butter and saute the onion until golden brown.

Add ground beef to the saucepan, cook until brown. Add a dash of salt & pepper to the meat and stir for a few seconds.

The potatoes should be soft and cool now. Smash the potatoes until they are mashed in a bowl.

Mix the egg, salt, pepper, and crushed bread stick with the mashed potatoes.

Using a baking sheet, take half of the mixture and spread it out on a baking sheet after greasing it.

Add the meat above this layer.

Add the other half of the potato mixture over the ground beef (to cover it all of course!).

Add one table spoon of butter on top of the potato.

Bake in the oven at 450F/250C for 15 minutes.

Burger My Way

Let me introduce you to my burger recipe so that you can do it at home easily.

Ingredients (Four Burgers):

Four Burger Buns
1/4 Pound of Ground Beef
Cabbage
Tomato
French Fries
Mayonnaise
Ketchup
Salt & Pepper
Burger seasoning (you can find it in any supermarket)
Crispy Bread sticks/Bread Crumbs (“kaak”)

How to Prepare:

Crush one bread stick (two teaspoons of kaak).

Place the ground beef in a bowl and add the crushed bread stick to it with a dash of salt and pepper.

Add a half teaspoon of burger seasoning to the bowl and mix all together.

Make the mixture into a burger pattie about 3 to 4 inches in diameter and a 1/4 inch thick.

Pre-heat your George Foreman grill (or you can use a Teflon pan and cook it as you desire using butter).

Place the burger patties in the grill and cook until ready.

Hollow out the bottom of the burger bun.

Dice the cabbage and add one tablespoon of mayonnaise to it and mix.

Place the cabbage and the mayo on the hollowed part of the bun.

Slice the tomato and place on top of the cabbage.

Place the french fries above the tomato and add some ketchup.

Place the burger pattie on the fries and close the bun.

Now it is ready! Believe me this is goooood.

Feeding baby – Stage Six (10 to 12 Months)

By this point, your baby should be eating almost everything. It is important to offer a variety of textures and flavors.

In my case, my baby is no longer eating the vegetable soup so I started feeding him homemade dinner meals at lunch time.

My pediatrician recommended that I start giving him some Fish. I haven’t done so because I feel more comfortable to wait a little more on this (I get scared with fish bones).

Roasted Chicken

Roasted chicken in Syria is like a pretzel in New York City, there is a vendor on almost every street. It is usually roasted on a stick and very delicious. I will show you today how to roast the chicken in the oven. It will taste great!

Ingredients:

One Whole Chicken (2 Pounds for this recipe)

Lemon

Garlic Cloves

Oregano

Thyme

Olive Oil

Butter

How to prepare:

Clean the chicken by removing the neck and the guts, then add salt and water to clean it.

Let it drain until it is all dry.

If needed, wipe with paper towel to dry.

Stuff the chicken with one tablespoon of butter, half lemon, 2 cloves of garlic and some oregano and thyme.

Put some salt and pepper on the outside of the chicken and brush with olive oil then spray some oregano and thyme on it.

Bake at 450F/250C for 45 minutes.

Take the chicken outside the oven and let rest without touching for 15 minutes then serve.

Eggplant-Beef Gratin

Eggplant is one of my favorite vegetables. Being on a low-carb diet, this is a perfect recipe for it.

Ingredients:

Eggplants
Tomatoes
1/2 Pound of Ground Beef
Shredded Mozzarella
Salt & Pepper
Butter
Diced Onion

How to Prepare:

Slice the eggplants into 1/4 of an inch thick slices.

Deep fry the eggplant slices until golden.

Boil the tomatoes for 5 to 7 minutes. Peel the skin and then crush into a sauce.

Using a saucepan, melt one tablespoon of butter and fry the onion until golden yellow. Add the ground beef with some salt and pepper cook until it is done.

Using a Pyrex Sheet, place half of the eggplant slices on the bottom.

Add the ground beef on top of the eggplant.

Add the remaining slices over the meat.

Pour the tomato sauce over the eggplants evenly.

Add some mozzarella cheese on top.

Bake for 15 minutes at 4o0F/2o0C.

Spinach Quiche

This was the first time that I made and ate Quiche. Let me tell you, I am for sure making this dish again. Go ahead try it and you might love it.

Ingredients:

One Onion

Butter

Half Pound of Bacon

One box of Mushroom

One cup of Spinach

One cup of Heavy Cream

One Cup of Grated Cheese (Your choice of Cheese)

7 Eggs

Salt and Pepper

Half of the Pie Crust

How to Prepare:

Prepare the pie crust without the sugar.

Slice the onion.

Slice the mushrooms.

Cut the spinach and clean it (I used frozen ones since i live in the desert).

Using a skillet, fry the bacon with some butter until it is cooked.

Remove and drain on the side.

Using the same skillet without cleaning, add 4 tbsp of butter and melt.

Add the onion slices and cook until it is brown.

Add the mushroom slices and cook for 2 to 3 minutes.

Add the spinach.

Add salt and pepper for taste and cook it for a few minutes, then put on the side to cool down.

Roll out the crust and place in a pie sheet.

Crack the eggs in a bowl and whisk with the heavy cream and salt and pepper.

Add the grated cheese and whisk until it is all mixed.

Add the spinach/mushroom mixture to the bowl.

Add the bacon and mix.

Add the final mixture into the pie crust and press down evenly.

Cover with foil loosely.

Bake at 400F/200C for an hour removing the foil the last 15 minutes.
