Chicken Pizza

A healthy, low carb, pizza style, baked chicken breast. A very tasty twist to pizza and chicken at the same time. You can use this recipe and add whatever you like on your pizza to the chicken breast. Here are the toppings that I usually love to have on my pizza.

Ingredients:

Chicken Breast

Tomatoes

Onion

Garlic

Olive Oil

Mushrooms

Olives

Sweet Red Pepper

Salt and Pepper

Ground Thyme

Basil

Mozzarella Cheese

Butter

How to Prepare:

To prepare the tomato sauce, boil the tomatoes for about 5 to 7 minutes to peel them easily.

Crush the peeled tomatoes into a sauce.

Dice the onion and garlic and sauté in one table spoon of butter until soft.

Add the tomato sauce with some salt and pepper and cook on a low heat until the sauce gets thick for about 30 minutes.

Once the sauce gets thick, turn off the flame and add one teaspoon of ground thyme and one teaspoon of basil.

Slice the mushrooms and sauté them in butter until they get soft.

Cut the chicken breast vertically in half and beat a bit to get thinner but not much so it doesn’t rip off.

Season the chicken breast with salt and pepper and and place them over an oven sheet after greasing it with olive oil.

Pre-heat the oven to 400F/200C.

Put some of the sauce on top of the chicken breast then spread some mushrooms and top it with some sweet red pepper and olive.

Bake in the oven for about 20 minutes then add the shredded mozzarella cheese on top of the pizza and bake for another 10 minutes.

Cooking Class!!!

When I was in Doha, I had the chance to teach some colleagues a few Arabic dishes. We cooked for almost two hours. It was so much fun to cook and taste the food that we prepared from scratch which was paired with some delicious wine. We made Lentil Soup, Arabic Salad, Hummus, Muhammara, Spinach Fatayer, and Fattet Hummus

Fattet Hummus

Yummy dish!! In Syria, you can find this dish without chicken and usually served in the morning especially in Damascus. I find it is way too heavy to eat in the morning so I add the chicken pieces to it and serve for dinner. We love it.

Fattet Hummus 2

Ingredients:

Chicken Breast

One cup of Chickpeas

Water

One cup of Ground Sesame (Tahini Paste)

One cup of Plain Yogurt

Arabic (Pita) Bread

Squeezed Lemon

Salt

Almonds or Pine Nuts

One crushed Clove of Garlic

Parsley (Optional)

How to prepare:

Boil the chicken breast until it is fully cooked skimming the froth as it appears.

When the chicken is cooked, take out of water and shred.

Boil the chickpeas with water for about half an hour (keep the water).

Cut the Arabic bread into pieces and deep fry them until golden.

Mix the ground sesame (Tahini Paste) with the yogurt, garlic, salt, lemon, and one cup of the water that you saved from boiling the chickpeas or the chicken.

In a tray, put the pita pieces on the bottom then add the chickpeas.

Add the shredded chicken pieces on top of the chickpeas, then add the Tahini sauce that you prepared to cover all the chicken.

Using a sauce pan, fry the almonds or the pine nuts in sizzling butter until they are golden brown and add it on top of the tahini sauce.

Garnish with some parsley if desired.

Spinach Triangles

Spinach Triangles or Spinach Fatayer are essential in every Arabic restaurant. Today, I will introduce you to homemade spinach fatayer. Homemade ones are rich in ingredients and more delicious than the ones you eat at a restaurant.

Let’s do it…

Ingredients for Dough (this will give you 6 pieces):

One Cup of Flour
One Spoon of Vegetable Oil
Pinch of Salt
One Tablespoon of Yeast
Half Cup of Warm Water

How to make the Dough:

Put the flour in a bowl.

Add the oil and salt to the flour.

Add the yeast and slowly pour the water while kneading until it forms a sticky dough.

Sit the dough on the side so it can rise, covering the bowl with a clean kitchen towel. The dough must get to 80F. Keep covered for 45 to 60 minutes.

Ingredients for the Spinach:

One Bushel of Spinach or a Box of Baby Spinach
Half Tablespoon of Olive Oil
Salt & Pepper
Half Tablespoon of Sumac

Half Diced Onion
One Teaspoon of Pomegranate Molasses

Half Cup of Crushed Walnuts.

How to Prepare the Spinach:

Cut the Spinach into small pieces.

Rinse Spinach in water very thoroughly.

Drain the Spinach.

Add the olive oil, salt, pepper, sumac, onion, pomegranate molasses, and the walnuts to the spinach. Mix all the ingredients.

Now, we start to prepare the Fatayer (Triangles).

How to Prepare:

Pre-heat oven to 450F/250C.

Take a small piece of the dough. Use a rolling pin to flatten the dough (put some flour on the rolling pin and surface so the dough does not stick) in a circular shape – about two inches in circumference.

Take one tablespoon of the Spinach mixture and place in the middle of the dough.

Wrap the dough around the Spinach mixture in a “triangle shape.”

Repeat this until all of the materials are done.

Put some vegetable oil on a oven sheet. Spread it over the surface.

Place the triangles on an oven sheet.

Put it in the oven for 10 minutes and flip over for another 10 minutes. Once the triangles are red, turn off.

Sir-Mix-A-Lot!

This is the new addition to my kitchen. I got the Breville as a gift for Christmas.  That was one of the best gifts since I don’t have my Kitchen Aid Mixer or the small electric mixer that I own. No excuses now not to make more soup and discover new recipes ;).

Arabic Salad

This is the Classic Arabic Salad that you can find in every Arabic restaurant. It is easy to prepare, rich on vegetables and has a tasty dressing.

One Tomato
1/2 Cucumber
A bushel of Lettuce
One cup of Artichoke Hearts
Salt
One tablespoon of Olive Oil
One squeezed Lemon
One teaspoon of Ground Mint

How to Prepare:

Cut the tomato, the cucumber and the lettuce into small one inch squares, and place them in a salad bowl.

Add the artichoke hearts to the bowl.

Add the Olive oil, the salt, the mint and the lemon to the bowl and mix.

Now you are ready to have a unique and delicious salad.

Chicken Veggies Stir Fry

My sister sent me this recipe that she came up with when she had some left over  grilled chicken that she didn’t want to toss out. I tried it and it was so delicious. I think I will always grill extra chicken for a delicious meal the next day.

Ingredients:

Left over Grilled Chicken Pieces

Diced Potato 

Diced Mushroom

Diced Carrots

1 Cup of Water

1 Cube of Bullion or 1 Cup of Stock 

Thyme

Parsley 

Diced Onion

3 tbsp of Butter 

2 tbsp of Lemon 

How to Prepare:

In a pot on medium, high heat, add the butter then onion and potatoes and stir for about 5 minutes until they get some color.

Add the carrots, the mushrooms and stir for about 2 minutes.

Add the lemon then the stock and bring it to a boil then add the chicken pieces, sprinkle with salt, pepper, and thyme.

Cover and put it on medium, low heat for 20 minutes, uncover and leave it for extra 10 minutes.

Sprinkle with diced parsley and serve.

In case you don’t have left over chicken, just fry some in a separate pan.

It is that time of the year when we are getting close to the Super Bowl. Here is one of the dishes that I will prepare for the big game.

Ingredients:

-1/2 block of pasteurized cheese – Mild Mexican Velveeta(8 oz)
-1/2 block of the original pasteurized cheese (I used Kraft Chedder Cheese)8 Oz
-8 oz of chunky no bean chili (Mild)

How to Prepare:

-Using a crock pot, start warming on low.
-Cut the cheese blocks into pieces to make it melt faster.
-Add the chili and turn the crock pot onto medium.
-Let it cook for about 2 hours stirring every now and then (Remember each crock pot is different. You might need to turn it down to low so it doesn’t burn on the edges).
-Take it out and blend it in a blender.

Now you can serve it with some chips.

Sheesh Burak

Sheesh Burak is meat dumplings with yogurt/rice sauce. It is just to die for. We love it in our household. My brother today asked me when will I do it again as we were eating it.

Ingredients for Dumplings:

One Cup of Flour

Two Tablespoons of Vegetable oil.

Half Cup of Warm Water.

Salt & Pepper.

Ground Beef.

Diced Onion.

Ingredients for the Sauce:

Four cups of Plain Yogurt

Half cup of Rice

One cup of cold water

Four cups of hot water

One Egg

Two cloves of diced Garlic

Ground Mint 

Olive Oil

How to Prepare the Dumplings: 

Prepare the dough by placing the flour, vegetable oil, salt and warm water in a pot and mix all together.

Kneed the mixture to form a ball of dough.

Using a saucepan, fry the onion until it is golden yellow then add the ground beef and cook until brown.

Add a dash of salt & pepper to the ground beef and stir until well cooked.

Take a small piece of the dough.

Use a rolling pin to flatten the dough (put some flour on the rolling pin and surface so the dough does not stick) and flatten into a round shape.

Put one teaspoon of the meat in the dough and roll it into a half-circle shape and press well on the edges to close, then bring the far ends together and press well till they get stuck together (as shown in the picture).

Deep fry the meat dumplings until golden brown.

How to Prepare the Yogurt Dip:

Mix the yogurt with the rice, the egg, and the cold water until all are blended well.

Put the mixture in a large pot and cook on medium heat while stirring continuously until it starts to boil.

DSC00173When it starts to boil, add the four cups of hot water and lower the flame and let it cook until the rice is ready for about 25-30 minutes.

For flavoring the yogurt sauce, use a sauce pan to heat two tablespoons of olive oil.

Add one tablespoon of the ground mint and the diced garlic to the vegetable oil and stir until the garlic is light brown.

When the yogurt sauce and the rice are all cooked, turn off the flame and flavor it with garlic, mint and vegetable oil.

Let it sit for one minute then serve.

Beef Stew Syrian Way

Dinner today was beef stew. This is a recipe for the Syrian style of beef stew. It is a very good dish especially in the cold days of winter.

Ingredients:

Beef

Tomatoes

Onion

Garlic

Salt

Pepper

Butter

How to Prepare:

Slice the onions and cut the garlic.

Prepare the tomato sauce by boiling the tomatoes for 5 to 7 minutes then peeling them and processing them in a food processor.

Cut the beef into cubes.

Melt one tablespoon of butter then add the onion and garlic and stir until they become soft.

Add the beef cubes with salt and pepper and cook on a low flame until the color changes to brown.

Add the tomato sauce and let it simmer until the sauce becomes thick and the beef cubes are well cooked for about 45 to 60 minutes.
