My sister sent me this recipe that she came up with when she had some left over grilled chicken that she didn’t want to toss out. I tried it and it was so delicious. I think I will always grill extra chicken for a delicious meal the next day.
Ingredients:
Left over Grilled Chicken Pieces
Diced Potato
Diced Mushroom
Diced Carrots
1 Cup of Water
1 Cube of Bullion or 1 Cup of Stock
Thyme
Parsley
Diced Onion
3 tbsp of Butter
2 tbsp of Lemon
How to Prepare:
In a pot on medium, high heat, add the butter then onion and potatoes and stir for about 5 minutes until they get some color.
Add the carrots, the mushrooms and stir for about 2 minutes.
Add the lemon then the stock and bring it to a boil then add the chicken pieces, sprinkle with salt, pepper, and thyme.
Cover and put it on medium, low heat for 20 minutes, uncover and leave it for extra 10 minutes.
Sprinkle with diced parsley and serve.
In case you don’t have left over chicken, just fry some in a separate pan.
Will be in charge of my Dad whilst he’s recuperating from an op so am going to give this a go, as I think it’s even simple enough for a numpty like me!
