A healthy, low carb, pizza style, baked chicken breast. A very tasty twist to pizza and chicken at the same time. You can use this recipe and add whatever you like on your pizza to the chicken breast. Here are the toppings that I usually love to have on my pizza.

How to Prepare:
To prepare the tomato sauce, boil the tomatoes for about 5 to 7 minutes to peel them easily.
Crush the peeled tomatoes into a sauce.
Dice the onion and garlic and sauté in one table spoon of butter until soft.
Add the tomato sauce with some salt and pepper and cook on a low heat until the sauce gets thick for about 30 minutes.
Once the sauce gets thick, turn off the flame and add one teaspoon of ground thyme and one teaspoon of basil.
Slice the mushrooms and sauté them in butter until they get soft.
Cut the chicken breast vertically in half and beat a bit to get thinner but not much so it doesn’t rip off.
Season the chicken breast with salt and pepper and and place them over an oven sheet after greasing it with olive oil.
Pre-heat the oven to 400F/200C.
Put some of the sauce on top of the chicken breast then spread some mushrooms and top it with some sweet red pepper and olive.
Bake in the oven for about 20 minutes then add the shredded mozzarella cheese on top of the pizza and bake for another 10 minutes.
