Another great vacation to Europe. This time we visited my sister and brother in-law in Belgium. It was rainy and cold but this is Europe. Despite the weather, we had an awesome time.

So, our first road trip in Morocco was to Casablanca since it is only an hour away and in my head was the line from the movie Casablanca, “Here’s looking at you, kid”. I was shocked when we entered the city because of the horrible traffic. When we arrived to the biggest mosque in Morocco, Hassan II Mosque, the site was so beautiful. We agreed that it is a one time trip to Casablanca since there is not much to do or see, plus the traffic takes most of the trip.

We finally made it to Rabat and we are so excited to call it home for a while. The transition was a bit tiring since we caught a bad virus shortly after arriving. Also, we are still waiting to receive our stuff so that I can set up my kitchen and start cooking all the delicious Moroccan food which I have been tasting.
The food in Morocco is outrageously delicious and the people are so nice and friendly. Of course, Moroccan tea has become a daily routine for us as well.
I am looking forward to visiting the different cities in Morocco and will be sharing some photos with you.
During our transition to Morocco, we decided to take a short stop in Paris. It was a short stay but we were able to see some sights, walk in the streets and have a nice Parisian lunch at a local restaurant. The weather was perfect and we got to practice our french a bit and rest before heading for our next adventure.

After a month of transitioning, we finally made it to our new home. During this month, we made a stop in Germany to see family so Aiden can enjoy some time with his cousins as well. I love going to Germany, we alway have lots of fun and of course great food.

My son is 2 already. I can’t believe how time flies. I still feel that he is a new born baby. Well, I can say that it has been a great two years watching him grow and I am looking forward to seeing him continue this journey with lots of adventures to come.
Aiden’s favorite thing is fire trucks so what is better than a fire truck cake for my little man.
Again working with the fondant is never easy but so much fun :).
For my son’s second birthday and since like any boy he is obsessed with fire trucks and fire fighters, I decided to make a fire truck themed party. For the cookies, I chose a fire hydrant shape.
Ingredients:
1 1/2 Cup of Flour
1/4 Tsp of Salt
1/2 Cup of Sugar
7 Tbsp of Unsalted Butter at room temperature
1/2 Tsp Vanilla Extract
1 Egg
How to Prepare:
Pre-heat the oven to 375F.
Mix the butter and sugar then add the egg and vanilla and mix well.
Decorate with frosting.
After being away from the blogging community for a while due to my active toddler, who is almost two, and the preparations for our next move, I had no time to make new recipes lately but I knew I had to take some time in the kitchen today and make something for July 4th. So, I baked a cake and worked with the marshmallow fondant to decorate it with the American flag. It was quite a challenging to decorate with the fondant and my toddler screaming for me at the same time.
At the end I am so happy with my first attempt 🙂
Another great meatball recipe…yummy!!!
Ingredients:
Box of Lasagna
1/2 Lb of Ground Beef
2 Tbsp of Bread Crumbs
One Egg
Diced Garlic
1/2 Tsp of Garlic Powder
4 Tomatoes
One Tbsp of Tomato Paste
Salt and Pepper
Ground Basil
Olive Oil
Shredded Mozzarella
How to Prepare:
Mix the ground beef with egg, bread crumbs, salt, pepper and garlic powder.
Assemble the meat mixture into small balls.
Boil the tomatoes for 5 to 7 minutes. Peel the skin and then crush into a sauce.
Heat the olive oil and add the meatballs, flipping them every 4 minutes until all are brown.
Fry the garlic in a saucepan until blond then add the tomato sauce, tomato paste with some basil, salt and pepper, then add the meat balls to the sauce.
Once it starts to boil, lower the flame and let it simmer until the sauce gets thick.
Boil water adding salt and a little olive oil to it.
Once it starts to boil add the lasagna sheets and boil for 10 minutes.
Put in a baking sheet a layer of marinara sauce.
Add a layer of lasagna sheets then add half of the meatballs on top of it sprinkling some mozzarella cheese.
Add another layer of lasagna sheets and the rest of the meatballs with some cheese as well.
Add the last layer of lasagna spreading marinara sauce then mozzarella cheese.
Put in the oven at 350F for 10 minutes or until the cheese melts.
