I made this dish the other night as a change from the regular chicken and potato dish. It has a nice spice to it. You can marinate it over night or at least four hours before baking.
Ingredients:
One pound of Chicken Breasts
2 Big Potatoes
2 Onions
One box of Mushrooms
2 tbsp of Tomato Paste
One tbsp of Hot Sauce
One teaspoon of Ground Coriander
One tsp of Ground Cumin
2 Garlic Cloves
One tbsp of Olive Oil
Salt and Pepper
How to Prepare:
Marinate the chicken breasts with the tomato paste, hot sauce, ground coriander, ground cumin, crushed garlic, olive oil, salt and pepper overnight.
Slice the potatoes, mushrooms and onion.
Season the potato slices with salt and ground coriander.
Grease an oven tray with olive oil and place the potato slices on the bottom.
Place the marinated chicken breasts on top of the potato slices then cover with onion and the mushroom slices.
Cover the tray with foil and bake at 400F/350C for 45 minutes.
